can someone please explain to me exactly what is and how to slow-sync and second curtain sync on a Canon Speedlite 580EX II in a 40D.

Slow sync is when you expose for ambient light so in a dark or dim light using AV mode the camera would expose for the available light and the flash goes of just before the shutter closes when set to 2nd curtain sync freezing the subject in range. search flickr for 2nd curtain sync for lots of examples.
