I have just set my camera too:
Center-weight exposure metering
Continuous AF control

Will this help me take better motorsport pictures?

C-AF is a must! I've never changed the metering but I'll give it a go.

I think I use a wide centre AF rather than normal. D300 next and that has 3D tracking AF! :D

C-AF yes for certain.

Centre weighted exposure - centre cluster yes, centre single point can be a bit mixed in results dependent upon the livery of the car

If the light isn't too changeable then you might be better off using manual exposure. That way you can be sure the white cars come out white and the black ones come out black. Leave the decision up to the camera and there's a danger they'll all come out grey.
