You can enable the crop mode by use of the FN button - see page 61-62 in the D700 manual on how to do so

Would'nt even consider the tethering option, i prefer to use a card reader and lock the images as i go along, cables strewn across your body with possibly another body around your neck means a messy environment, also your camera batteries may drain your laptop juice quicker than a card reader...
