Chocolate Brownie Cookies


Serves: 72
• 85g best-quality cocoa powder
• 400g caster sugar
• 125ml vegetable oil
• 4 eggs
• 2 teaspoons vanilla extract
• 250g plain flour
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 60g icing sugar
Preparation method
Prep: 20 mins [Cook: 12 mins
1. In a medium bowl, mix together cocoa, caster sugar and vegetable oil.
Beat in eggs one at a time, then stir in the vanilla. Combine the flour,
baking powder and salt; stir- into the cocoa mixture. Cover dough, and
chill for at least 4 hours. '~.

2. Preheat oven to 180 C / Gas mark 4. Line 'baking trays with
parchment. Roll dough into 2.5cm balls. Coat each ball in icing sugar
before placing onto prepared trays.
3: Bake in preheated oven for 10 to 12 minutes. Let stand on the baking
tray for a minute before transferring to wire racks to cool.

Had fun making them today as a mother's day treat for my wife, and I have to say they are lovely! I've never managed to successfully make gooey cookies before (they always turn out as crispy biscuits) so thank you for the recipe.
 
ohhh i am so pleased to hear that.. please share the recipe you friends...they keep well in an air tight tin too...

oh and as an up date i still have loads to make

Nod Y has big posh cooker now so gonna crash there and do them J will scream abit but hey that is normal.... as for sending down the A303... we will have see.. and A thinks mum is the dishwasher..

Well I tried you recipe today. Mine did not turn out like this. I followed the recepie exactly, but mine didn't work when turning it into a dough / ball because the mixture was too runny. Then after cooking it, it like turned up all boring and flat and not pretty like yours :(
 
the weather is warmer yes i know.. ihave had problems... leaves at east 12 hours for or more in a large bowl.. and after the first 2 trays put back into the fridge.. honest they do work... sorry didn't work this time
