    RAW is raw data whereas jpeg is the camera applying processing to the raw data to produce the jpeg, losing some of the raw data in the process. You 'develop' the raw data when opening the RAW file in lightroom. I'm not sure about lightroom but in Adobe Camera RAW you can only open the RAW .CR2...
