Did a test yesterday on a D300 and a D300s both set to Fine large jpeg
I put by 8GB sandisk EXT III Cf card into my D300S formated it and the camera shows i have 1.1k exposures remaining,Then i put it in a friends D300 formated it it reads 783 exposures remaining.

Why would a D300s be capable of 317 more shots than the D300 on the same card? or am i missing something here?
 
Probably to do with the algorithm used to calculate the remaining shots. Perhaps on the 300S they have refined it to be more accurate.

On my D300 its not even approaching accurate until right near the end of the card and even then the last couple are still telling you that you only have one more shot left and you keep taking that last shot for some time :)

Its basically because if you are shooting jpegs the size of each file is variable - by quite a lot.

On a 8gb card I can get about 1400 shots normally.
