Synctoy. Free, easy, and it works.
Yeh have downloaded it and just used it and its seems like exactly what i was after.

I use one called version backup. Written by a mad German but it looks at the folders I chose (My documents and my pictures) and analyses any changes and backs up every night at 7pm because that's what I asked it to do

When a removable device is connected
Every xx number of minutes
When file changes are detected
When computer is idle
Before Log Out
...or using Windows Task Scheduler - you can also mix all of the above.
Pretty powerful - set it and forget it.

Microsoft SyncToy was suggested to me and I have to say it is fantastic.
Only issue I had was that It would not backup my Outlook files if Outlook was open but I wrote a smalll .bat file and now it works like a dream
