Just thinking of downloading gimp as my first introduction to photo editing didn't really want to pay out for elements etc.
Is this a good idea? And can you add watermarks in Gimp?

The Gimp is almost as capable as photoshop - indeed it's more capable in some respects. None of the differences are things that any beginner will care about or understand. Go for it.

Check gimpguru for tutorials; http://www.gimpguru.org/Tutorials/ The Gimp can do watermarks and a google for 'gimp watermarks' will give you multiple tutorials on the first page.

For raw conversion you may need UFRaw. For file organization Picasa is pretty good.

The tutorials aren't very good, as they need audio commentary and my microphone doesn't work very well (I move the cable a tiny bit and there's very annoying cracking noise).

If you want to process RAW files, try UFRaw, it works as a plug-in for the GIMP as well as a standalone program.
I prefer RawTherapee, which doesn't integrate with the GIMP, but it's very good.
