Help with RX100 iii focus mode

I just received my RX100 iii and need some assistance with the focus mode.

In aperture mode I would like to have a single focus point that I can move around the screen to chose the item I want to focus on.

I can do this by going to Menu > Focus Area > Flexible Spot and then moving the focus point then take a photo, however, I have to repeat this process each and every time. I just want to be able to move the focus point where I want to after every shot.

Am I missing something or is this just not possible.
