i converterd a d1x a year or so ago... works great 
love it... was reasonably simple to do... although still managed to mess it up and cut of the wire to one of the controls... ah well, it was nothing important
have you looked on lifepixel? (i think) it has tutorials of how to convert cameras, which give a good idea of the difficulty

The Canon 300D is one that has been converted a lot you can also find how to do it on the net I remember seeing it.

Yep, when I looked into doing it D1x and D70 were coming out as front runners. I bought a D1x and had to take it apart to replace the glass LCD cover. Not at all difficult to do and plenty of instructions on the web. I only decided against it when I decided to use a film camera for IR instead and sold the D1x.
