Lightroom 3 and Backups

Right I used to do my backups manually, and would keep them in folders order. But ever since I moved to the Mac world, and started using iPhoto, its all gone out the window basically.

Lately I've had a few people ask me to do some family portraits etc, and I need my cataloging back. So I've now got Lightroom 3 (still undecided about aperture)

I've setup lightroom to backup the catalog db to my external hdd evertime I exit LR.

The next bit I've done is File > export as catalog.

The last bit is exporting the whole catalog. The next time I run this command will it do:
a. export all the photo's again and overwrite the old ones?
or b. export only the new photo's since last backup?

Ideally it's the second one unless of course I have edited one of the old ones and it'll overwrite it.

Can someone give me a clear step by step guide on how to backup my photo's and catalog using LR. I've gone on google but theres so many ways but they don't explain which method does what and they also seem for LR v2.

I don't back up my photos at all using Lightroom, I back up the catalog, but the actual images are backed up at the same time as the rest of my files, (using Time Machine).
