Manual Focus lenses

Excuse the newbie question, but
If I use a manual focus 50mm lens on a Fuji S2 Pro will I still be able to use other auto functions, such as aperture, shutter speed etc and just focus manually or will I have to set all of the values manually?

It depends on the lens you use, if it is a "chipped" lens then you are ok to meter etc. and only need to do the focusing.

Chipped lenses are those that have in-built chips that transfer data to the camera. This is in contrast to non-chipped lenses which would not do this, for these lenses you would need to do everything pretty much manually.
 
Assuming the S2 works in the same way as the Nikon D200 upon which it is based, you will need to:

- set the aperture manually on the lens
- go into the menus and set the focal length and max aperture for your lens

The camera will then meter based on the above. You can set the shutter speed in the normal way.

Focusing will be manual of course.
