"Mature" portraits

Hi, I have little studio experience (most of my experience is live action dance photos) and I have a new home studio set-up with three strobes, two softboxes and a couple of umbrellas. One of my first clients will be an elderly couple. I don't have a problem with the age but the lady has VERY thin, permed, grey hair which leaves her scalp fairly clearly visible. Any tips on how to light this situation to her best advantage or how to deal with this in photoshop will be much appreciated. I don't want to try and turn her into a gorgeous babe - just to do the best job I can for her and her family. :thinking:

My camera is a Nikon D700 and I'll be using a Nikon 24-70 f2.8 lens.

can you try to shoot from a low angle therefore not seeing as much of the scalp in the first place
 
Possibly better without a white background and more a low light portrait shot?
 
Also, keep the lighting pretty flat and, obviously, don't use a hair light
