I have just bought a manfrotto monopod (model 680B) for a friend forthcoming wedding.

Can anyone recommend an easy to use head for this please?

The Manfrotto 234RC is fairly good, the quick release mechanism is handy for more than one lens.
 
Note that the QR plate on the 234RC is the same overall shape & size as similar Manfrotto QR plates and can be used interchangeably with them but the reverse is not true due to some required cut-outs in the 234RC plate rim.

The 484 / 6 rc2 ball heads are very good (think the new models are 494 / 6), give you that extra bit of height as well. :thumbs:

You sure about that?

I bought the 460MG head and the 234RC and the plates are the same, both using the RC2 plates, no obvious bits different to each other and most importantly the plate from the 234RC fits the 460mg head securely.

Maybe the 460mg uses a different plate as well?

Ohh yeah the 234RC is a great head for a monopod.

AFAIK, the QR plate supplied with the 234RC is 100% compatible with all other heads that use the same (PL200) plate, and all PL200 plates are compatible with the 234RC (at least, all the plates that have come with all the heads I've bought as well as adaptors fit all the heads).

The QR Plate on the left is from my 234RC monopod the QR Plate on the right is also Manfrotto (I use it on my 'scope). You can use the QR plate on the left anywhere the QR Plate on the right will fit but not the other way round - in other words, if you have a plate like the one on the right in your collection, it won't fit the 234RC head.
Just something to watch out for - it caught me out !
