I am puzzled by the above.
I have paper profiles on my Mac but unsure how they work. Sometime some how a long time ago when I was doing some printing paper profiles showed themselves, in the print module,
and I could choose which profile I needed for the paper I was using, now when I am going to carry out some printing I don't have a choice (all I get is plain or photo paper etc. ) So my question is really how do I choose the correct profile for the paper I am using.

Using latest Photo shop software and Monterey OS.
 
it seems you're looking in the wring place.

The Plain, Glossy, Matte etc options are in the print driver.

The paper profile should be picked from within the software ie. Photoshop
 
Thanks - but where is the print driver?.
 
The print driver is what pops up when you click Print Settings (from the Print dialog) in Photoshop. It's there that you will set the paper type ie. Gloss, Matte, resolution, bi-directional etc.

The paper profile is set in Photoshop just below the Printer Settings button under the section called Color Management.

Color Handling should be set to Photoshop manages colour and then you are able to choose a printer profile.
