)On Sigma's website, there's a list of what the initials all mean. IIRC, the APO refers to an aspherical element in the converter, the EX shows that it's one of their better products and the DG tells you it's suitable for FF and Dx bodies/lenses.
Of the 3 you've listed, I'm fairly sure you have them in the right order!
Just as something to think about , using a 2 times converter cuts down the light to the sensor considerably, my problem with that converter was I had to up the ISO considerably and slow down shutter speed in normal daylight. This then gave the normal problems of pixelation and confined to stationary subject. Even then only in bright sunlight (if you can remember what that was)
My guess is you are thinking of having a 600mm range without getting a 600mm lens, at least that was my thoughts originally and I found it wasn't that successfull.
So I opted for the Sigma 1.4 converter instead which still gave me 420mm max with the lens at 300mm.
Also be aware that TC's arn't compatable with all lenses and you need to check to see if the will fit.

The DG refers to some new coatings that Sigma introduced (or possibly the same coatings but decided to give them a new name).
I seem to recall that people who compared DG and non DG glass couldn't determine any difference.

So the APO DG AF would be better than the APO EX?
Going purely by the letters you give, I'm not sure the APO EX is an AF converter, so for use between an AF body and an AF lens, yes.
