Install the Magic Lantern firmware into your Canon and you'll get these features built in.

I also went FF with a 5D mk2 (from a 60D). I kept my 60D as a backup, but sold my Sigma 10-20 - as I didn't think I would use it as much. Even after 2 years, I still miss it.

I like the landscape one best. However, the sky is too bland and could do with some contrast. Also the grass on the right is too bright and needs darkened slightly.

I've done a bit of horse photography, and it takes time and patience. I've done natural lighting and flash. In my experience, they don't really mind flash, but they really don't like umbrellas or softboxes close to them. http://www.dazbrownphotography.co.uk/horses
