Stitching together double page spreads

I have a photobook where the pages were pretty much A4 size. I disassembled the book and scanned them, however some of the pages had a bit of discolouration towards the spine, and sometimes the colours weren't entirely consistent between scans. This is a problem when it comes to the double page spreads, because I'm having trouble convincingly stitching some of them.

First off, is there a way I can accurately check that the colours/tones/contrast/etc. on each side matches each other other than just eyeballing it?

Secondly, situations like this B&W image where the centre has faded are giving me quite a bit of trouble. I've tried altering the levels of the right side to match those on the left and then using a mask to try and isolate the adjustment to the faded centre part, but it just looks naff. Are there any techniques which would make this easier?
