Is there a way to change bulb mode on a 5d mark 3 so you dont need to actually hold the shutter button down. Instead you could press it once to open and then again to shut it?
 
Install magic lantern?
Remote release/intervalometer wired to the camera.
Or you could do as I did when I didn't have one. The elastic band and rubber trick.

Doesn't look like the intervals enter section does this, it is where you can set time lapse up.

I found the only way is to use manual mode, do a 30 second shutter then when you are done if it is inside the 30 second time limit you can turn the camera of and it works
 
You've made me get my camera out now!

Shoot menu>bulb timer then set how long an exposure you want while in bulb mode, from 1 second to 8 hours!

Magic Lantern.

If that's a feature that you'd find useful, install it, it's free and so easy to install it doesn't write anything to the camera it's all on the memory card.

Ok I found it but it doesn't do what I need unless I am being thick.

I changed it to 8s but when I press the shutter it just does the same as before.

Unless I keep my finger held down on the trigger it just stops straight away

Wait I've done it!

Half press shutter till it beeps. Then let go and it opens a few seconds later then you can stop it with a shutter press.

Yes you are! It's not even a feature I've used before, I've had to get my camera out again!

Set your camera to bulb mode.

Go into ML menu
Set your bulb timer for as long as you'd like
Read the note at the bottom of the screen that says something like "For really long exposures, press shutter button half way down for 1 second"

I've just done it now. Press the shutter to come out of the menu, then when you are ready to take the pre set bulb timed photo press the shutter half way down for one second and then let go, a second or so later it will start to take the picture.
