I'm working on a video at the moment and have been reading that it is best to turn down the settings to make it easier to colour correct later on, namely the saturation and contrast, however I have also been told to turn the clarity down too to its lowest setting. Now the videos I shoot really don't look HD. What is the best way to bring back the quality? Is it really a good idea to turn the clarity down, or just the other two settings?

Just turning down saturation and contrast can lead to totally underexposed/grey images. However having them too pushed can lead to saturation which destroys information that you can't get back when correcting. You need to have the ability to calibrate the equipment. If you're calibrating a TV, you have some reference material played through the TV and read with a seonsor. At a guess (as I've not done it), properly calibrating a camera would involve filming a colour/greyscale/resolution test card and adjusting the settings.
Having said that, I believe clarity is the equivalent of sharpness. Oversharp and you get ringing on the image which is totally unnatural. Having it too low will give everything a blurred look. This one can definitely only be done with a test card...
