Whichever camera you start looking towards, the key thing is to get yourself into somewhere like Jessops and handle a few. That was you'll start to work out for yourself what feels comfortable and easy to handle, and which features you are most likely to want. Take a look at this months Practical Photography magazine - it has an article on choosing your first DSLR which you might find useful.

First bit of advice never rush anything, there is always plenty of time and plenty of mags out there, some like the Digital SLR Photography mag is only about 4 issues old and explains the whole camera concept for a newbie in workshop style format and gives examples and help on the pros and cons of the cameras available and what you want to use it for.
Secondly is the whole lens thing, most of the manf make good lenses and there are some excellent TP manf too like Sigma but on the whole good canon and nikon lenses are not cheap and fitting type may sway your choice.
I personally have a 400D and an older S2 Pro and use them for different things because each has different functionality and persuasion hence the first paragraph here. The 400D is a superb mid range camera that has fair amount of functionality and short to mid term may be just what you want but wouold defo say buy a grip cos its small in the hand, adversely its a lot easier and lighter to carry round thatn the S2!
The other alternative is find a very good second hand setup incl some lenses etc. There are always a few for sale either on here or in your local shop perhaps and the people on these forums will always give help and advice.

I can only advise on a Canon set up, but would recommend the 50mm 'nifty fifty' as your starter lens for a studio, given your budget. This has a very big aperture of f/1.8 and you can get a new copy for about £60. If you chose to go with, say, a Canon EOS 350d or a 400d then the 50mm f/1.8 gives you an effective fov of 80mm which is pretty good for all purpose studio work. If you took the camera body with the 18-55 kit lens then you also have a reasonable lens for general interest out of studio.
Remember to put some money aside for lighting too - even if its for a good flashgun with diffuser.......

As Jonny said if you go Canon route, 400d would suite you great, I've had my 350d for nearly 2 years and only just upgraded to a 30d as I got a good bargin, the 350 is now my backup. Definately the 50mm 1.8 and again to repeat if you get the actual 400d kit then you've got another lens to boot.
There are always deals on, but once you decide which brand/model to go for, drop Kerso a PM on here as he may be able to do say a 400d with kit lens and a 50mm too for your budget of £500.
