Argh! I hate off camera TTL.

Will a cable with a hotshoe on the camera, and a PC port into the gun fire TTL flash from a 5D mk2/580 mk2 setup?

In all honesty I would forget the cables and get a S/H 550EX, 580EX/430EX or a new 430EXII and use the the wireless ettl.

I have a 580EX and a 430EX both used off camera with just an ST-E2 commander on camera, though your 580EXII will act as commander and communicate with any of the others to give metered ettl/ettl2 shooting.
I'm not sure if the 5D has a built in flash commander, but the 7D has, so you can use the both 580 or 430 series guns off camera with no extra gear needed.

For no ettl of course all you need is a cheap set of radio triggers.

No. The PC port has no E-TTL connections. You need a dedicated cord, which of course has all the necessary bits in it. You can get 10m long ones on ebay for about £40.

Or use the 580EXII as a master to fire a second remote slave gun, via wireless E-TTL.

As well as the CANON off camera flash cord, Lastolite also produce one which is ETTL compatible for around £30 from WEx.
