AV mode and flash Canon/Nikon

Can someone explain to me if canon and nikon both work in the same way with flash in AV mode? I had a 5D MKII and noticed in AV mode when I stuck a flash on the shutter speeds were very long and had to shoot manual or P instead. What is the reason for this?
 
Canon default to 'slow sync' in AV mode (aka, fill flash mode). It's a little quirk of canon. You can do this with nikon, but it doesn't default to it.

There is a custom function that will let you fix the shutter speed at max sync.
 
Didnt know there was a custom function, I used to resolve to shooting M mode as a result
