If I could only take one lens on holiday for a D800 (or D700) it would be a 14-24 or 16-35mm (however I'd cheat on the one lens rule and take a tiny 50mm 1.4 too).
There's no one answer to this question, as everyone has different styles of shooting - I know that when I go on holiday I wouldn't miss a telephoto but I would miss wide angle.
