I currently have the following thread on my lenses:
77mm - Sigma 10-20mm - Ive heard CPL's dont work well on UWA?
58mm
52mm

and just about to get the 15-85mm at 72mm

Could anyone advise whether I should just buy a 77mm thread CPL with step down rings for each or would I get better results with specific sized filters?

I currently have a 67mm filter for my 17-85mm but as I'll be moving this on, it'll be redundant and will need to find a new home.
 
Because the angle of view is so vast with UWA lenses you will see an uneven effect of the polariser across the scene. It's not a fault, just physics. Sometime it can add to a picture, but other times it is annoying. If you dial the CPL for maximum effect the variation can be quite pronounced. If you back it off then the effect is more subtle. Definitely it is soething to pay attention to when setting up the shot. The effect is visible in the viewfinder.

I haven't used step down rings, myself, but I can't see why they would impact your results in a negative way. Given the price of good quality CPL filters I think it would be a wise investment to buy the largest you expect to need - probably 77mm - and a couple of adapter rings.

Of course, if you decide not to use a CPL with the UWA then you could manage perfectly well with your current filter and just a couple of new rings.
 
I've got a 77mm CPL and it's 4.5mm deep if that's any help? does the manual for the 10-20 say anything about filters etc as that may have a few pointers, also depends on that camera you're using as the depth of the CPL won't have as much impact on a crop body that a full frame.

I haven't used step down rings before so can't comment on their effectiveness but it seems a good idea as you could get a good CPL and use it for all lenses.
