Camera with high speed sync 1/1000+

You'll struggle.
Presumably you mean 750 watt-seconds which must be a studio head and the flash duration will be longer than 1/1000sec (regardless of what the specs say) so you won't capture the full flash pulse.
You should get most of it though, and while no camera can officially sync at 1/1000sec, some cameras with CCD switching shutters will do it pretty well. Discontinued Canon 1D, Nikon D70/D40 etc, but some people use a Canon G12.
Alternative way is to use an ND filter to get the shutter speed down to a more normal 1/250sec-ish x-sync speed. Depends what you want to do, but high shutter speeds and flash are always uncomfortable bedfellows.

As Richard #2 says, it'll need to be one of the old Canon 1D, Nikon D40/D50 or D70/s models, or, if you fancy a format change, any of Hasselblad or similar cameras with leaf shutters will fit the bill....

1D mkIII does 1/300s. Apart from that you could look at medium format with lens shutters - that will give 1/500s or better. There is always high speed sync, but you will lose power - might balance out?
Are you shooting in very bright conditions? If not could you just not kill the ambient and get a short duration flash instead of using the shutter.

Care to tell us more? From the roller coaster pics I've seen (the automated ones you buy after the ride) you don't need either much power or high x-sync.

A lot of the sonys have HSS support. Can use shutter speed up to their max 1/4000. Standard ISO hot shoe and pc sync adapter is £15 or so from interfit so I'd imagine you could use that to trigger any kind of flash heads with the right trigger system that also supports HSS.
