....might seem daft, but in AV and TV mode you can turn the wheel to adjust the exposure level down to -2 and to 2.

In manual mode you cant do this, is the only way to adjust it through shutter speed and F.?

Am I missing something? Is there a way to adjust exposure level in manual?

You have to be able dial down compensation in AV and TV mode - it's the only way to override the cameras programming to keep altering aperture and shutter speed to maintain a given exposure value.

In Manual Mode you just alter the aperture and shutter speed as you like keeping an eye on where the exposure indicator is in the viewfinder. When you move it to left of the centre mark you decrease exposure - to the right you increase it. There are usually marks to indicate how many stops adjustment you've made.
 
hmmm I thought so, was hoping to be some how to change exposure while maintaining certain manual setting....thanks for the reply :-)
 
Well you can play with the ISO. For example if you wanted to keep a particular combination of aperture and shutter speed you could either halve or double the ISO speed to give a stop more or less exposure.
