Canon 5DIII custom functions question.

I just found out that I can set my dof preview button to switch servo mode from one shot to AI servo. I was so excited to be able to do this on the fly but after setting it I realize that it is a toggle between the two. That seems so stupid to me because it means that I have to hold the button while shooting if I want to change modes. So with back button focus set that means I have to use 3 fingers to shoot using it. What am I missing here, why would Canon set it like this?
 
No idea why it's not a push once to switch and then push again to go back. If I remember correctly you can set the AF ON button to AI servo and the AE LOCK button to single shot and vice versa.
 
I may be missing something here, but if you are using BBF then why would you need to toggle. For servo press AF ON and hold, for single shot, press and release.

@Gaz J I think you may be confusing the 5D3 with the 7d2 as I think the only way to have separate focus settings is using the Custom functions (C1,2,3).

The 7DMkII takes the set up even further that the 5D3 and 1DX. I don't have my 5D3 any more but I thought it's the same set up as the 1DX. It just need someone who has a 5D3 to check in the custom controls if you can set the two buttons to separate AF settings.

I see you have a 5D3 Chris so if you go into custom controls and select the AE LOCK button then press the INFO button you may get another menu with some more options. Or you may not. In which case you can't do it.

I'm confused to why you would think that by using bbf it would eliminate the need to switch servo modes on the fly. They are completely different functions.
On the 5DIII canon has made it a toggle so in order to use it to change servo modes you have to hold while shooting which seems absurd to me because I am already using two fingers to shoot and this would add a third finger.
