There are holes in the ball, which is strange to look at, but there wasn't any movement at all with a 5DMKIII + 70-200mm lens attached, which is very impressive.

Your 5D3 and 70-200 is perfect, exactly what I used for those magazine tests. Using the lens foot you can set it up so the camera is perfectly balanced with almost zero friction applied.
A little lock-down shift isn't really a problem if you only shoot wide-angle landscapes, but for accurate framing with long lenses, or especially macro at say 1:1 it can be very frustrating. With a poor ball head, after you've struggled to line everything up perfectly, when you lock it down the subject drifts off to the edge of the frame! One of the worst heads I tried for that cost £350
