Canon EOS Fish Eye lens 8mm

I have a Sigma 8mm fisheye which I use on FF bodies where it gives a full circular 180 degree image. IIRC, it's the only option if you want AF. On a crop body, you lose a bit off the top and bottom of the circle. Not sure if there's a crop option that gives a circular image with no cutting off.
 
I use a sigma 8mm on a 40D, I mainly use it for panos, so PTGUI stitches everything together.

It is possible to get 'DeFish' software (it may even be possible in PTGUI) here and here.

I haven't tried the siggy on FF yet.
 
I think I've got a few examples on Flickr from it on FF and Dx. The cut off will be slightly greater on a Canon crop body than a Nikon Dx but not too much. If I remember next time I'm on the machine with the link in Favourites, I'll post a couple.
 
This one was shot using a D200 crop body and shows the 180° available as well as the cropping.

This one was shot on an FF D700 and shows no cropping but does highlight a couple of problems common to many fisheye shots - feet at the bottom of the frame and my shadow...

I'm not sure why you think you want an 8mm fisheye? On a crop sensor I'd have thought either 4.5mm or 10mm would make more sense.
