if you're shooting in Bulb mode (long night shots) on 5D Mark III, will it open the shutter with the first click and close it with a second click?

Yes it does on my 5d2.. I have several 300 second plus night exposures.... Cant see it being different on the 3...

Yes... exactly - I'm never going to stand there holding a button for 300 seconds :)
 
One click - wander off - one click when I'm done.... Have a cup of tea while waiting...
