Set up the SB600 unit that came yesterday for OFF camera flash. I'm sure that I've set the camera up properly but the camera still flashes as well as the SB600 unit. What am I doing wrong.?

When I pop the flash up on the camera, the aperture and shutter settings change dramatically. Think I need some help. Time to search you tube

In auto modes that'll happen.
If you want to control the mix of ambient and flash exposures, you will have to shoot manual (you can still do that whilst leaving the flash in auto mode to help you out a bit).
The key thing to remember when using flash is that there's 2 seperate exposures to manage, the ambient and the flash.

Outside in sunlight you could set your ISO and shutter speed and let the camera do the rest, but it's probably just as easy to shoot M.

Sorry to pester Phil, once it is set up in commander mode, are all the other settings ignored by the camera? Flash sync speed, Flash Shutter speed, Modelling flash etc.

I'm not a Nikon shooter, so some of this is a guess.
set to commander mode is the same as putting a flash on. If you're playing inside, that'll mean the camera will up the shutter speed and ISO.
The camera knows about mixing flash with ambient, when you put on the flash in daylight it'll use the flash as fill and when the light level drops it uses the flash as the main light source, all done automatically.
