Putting an extender/teleconverter on any lens will adversely affect that image. It may be that the image degradation will not be noticed by the human eye.
This may happen with a very high quality prime lens such as a Canon 300mm f2.8 or a high quality zoom such as the various forms of the Canon 70-200 lens.
This is not an absolute list and I'm sure many folk here would say their lenses are similarly unaffected.
However, when an extender is put on many other lenses the quality degradation is such that it is immediately noticeable.
You must satisfy yourself that the lenses you already own do not fall into that category.
As for the difference between the flavours of Canon extenders you mention I would suggest doing a Google search as this extensively covered in the web.
If you do decide to try one then you could also consider an alternative brand such as Kenko, particularly for a 1.4x.
