They're not really comparable, one is marketed as a "professional" body, the other is a consumer one....
D7000 without a shadow of doubt. I have used both and to me they have an identical feel so why would you want one with two year old or more electronics ?
It's also worth noting that nikon support class the D7000 and D300 as the same class of body and only list the D3's as true PRO cameras.

D300s:
Slightly more metal bits
2fps faster when shooting 12-bit RAW or JPG *and* the MBD-10 is attached with non-standard batteries loaded.
Dedicated AF-On button
Manual AF mode selection switch
Manual meter mode selection switch
Perhaps more comfortable if you have large hands
D7000:
Lighter
3.5 fps faster when shooting 14-bit RAW
Dual operation mode selector (unique across all Nikon bodies)
Perhaps more comfortable if you have smaller hands
Superior dynamic range
Superior high ISO performance
Superior resolution
Superior metering
Superior autofocus
Superior video
Superior in-camera NR
Dual card slots take same format media
Cheaper
So the way I see it, the two additional manual controls - one of which is essentially superfluous as spot metering can be assigned to the function button and the other of which can be simulated by using the new dual mode selector - and a couple of extra fps (if you're prepared to shoot 12-bit RAW or JPG) are the only real advantages of the D300s.
In all other ways, the D7000 is not only a better camera, it's cheaper and lighter too.
No contest.
I'm fully aware, but at present the D7000 is more expensive.
are you sure the s5 trumps the d7000 for dynamic range.As OP Tony (raider 2727) will know I have finally decided on the D300s. In the end it came down to:
- available now at a sensible price
- full pro build
- 8fps with modestly priced grip (most of my stuff is equine, show jumping and the like)
- brilliant 3d focussing
- 12mp and ISO performance are good enough for me (I have a D90 atm) if I get a poor image its me, not the camera. Up to A2 prints are fine with 12mp.
- D300 has separate rear focus button.
- Dynamic range? I trump the D7000 with an S5pro!
- I remain a bit concerned about reported dead pixels on the 7000, and I have yet to see a really comprehensive review.
Just looking forward to getting the D300s now!

Pick both cameras up, choose the one you like the feel of best, buy it, then use it to take some photos...
