AE-L/AF-L button

Does this work the same way as the * on a Canon? Press to keep exposure settings and then take the shot?

Also, now that i am getting my first D90, what settings should i setup in the Menu system before i start taking pics? Default settings that are a must. Changes that need to be done so that i get off on the right foot so to speak.
 
emm what type of file you want each pic to be stored as e.g RAW + Jpeg fine.
set white balance
set ISO
there are others

+ the cool thing with the D90 is that you can change to role of different buttons so you can set it up the way you want it :)

I meant are there any specific settings in the menu that are a 'must'. Ones that should be set a certain way to help the most.
 
As default, the AFL AEL button will lock the exposure and the focus when held. When you press the shutter, you'll get a shot regardelss of whether the camera thinks anything is in focus.

Your second question is down to the individual but I personally am a big fan of 'back button focussing'. Basically, you assign the AEL/AFL button to operate auto focus only. The shutter button half pressed will lock exposure but will not operate auto focus.

If you combine this with AFC focussing mode it gives you a great deal of control as you effectively have a camera that can do AFS, AFC and manual focus without touching a button. There's loads been written on these hallowed pages about it so worth looking up.

Same as my setup, also;
I have a default setup on import to Lightroom that adjusts the red hue and saturation, but this is just my preference.
