From past recommendation's of yours and what you stated about crop sensor/4/3rds cameras, I will stick the with R6 mark III and lenses.
I might add an R7 at a later date.
Not sure how the try before you buy works with Canon? I did have a quick look on their website , didn't find anything.

Good choice. You will have will have a very good system.
I have a R6 mark i and a R7. If you do decide to get a R7 at a later date I would recommend the Try The Kit system. If you make a booking over a bank holiday you will get an extra day. I am not a great fan of the R7 as I find it noisy but it does give a lot of extra reach which can be very helpful with bird photography. It is rumoured that the R7 is due for replacement but when is guesswork.
