DSLR Video Tips

Does anyone have any tips on how I might film moving subjects with a DSLR (1DmkIV)?
I want to try and make some videos like this guys but not sure if it's really possible with a DSLR with it not having AF.

If you have enough light you can use a fairly small aperture to get a big DOF and the focus isn't as critical - using hyperfocal length etc.

People do focus manually with DSLRs but I think they would normally have follow focus with gears etc = expensive. Also takes some practice.
