Could be the contrast or saturation settings in your camera if you're shooting jpegs? I prefer to set everything to off, including sharpening, for a neutral result.
If you're shooting RAW it shouldn't matter of course.
Edit... then again it could be the colour management settings in your editing package.
I'll have to explore the cameras settings then If I don't post for a while it's because I've done something wrong and can't work out why my camera will only take B&W photographs that are up side down
