focussing and recomposing

How do I do this with minimal affect to the image.

I know its a heinous crime but I'm using film kit which is centre focus point only. Also I never really worried before as my gear was always way too soft to notice (thankyou russia) but now I have some sharp enough to shave with gear so would like to make the most of it.

DoF will cover it with that stuff... you're unlikely to be shooting wide with that beast anyway...
The ground screen is a bit coarse on the 6x7, so just use the fresnel in the centre and recompose...tweak slightly if required...
I never had any issues with OOF images from any of those lenses...

you mean not use f2.8 on that amazing 165?
