From one iPad to another - how?

I've sold my old iPad and bought an iPad Mini 5. Problem is that bad planning on my part means that they won't both be here at the same time. D'oh!

Does anyone here know whether this process works:
* backing up the current iPad to Apple's cloud
* reset it and send to the new owner
* 3-4 days later, my new iPad arrives
* sign in with my existing Apple ID
* reinstall the apps I've previously purchased
* get the new iPad to download the backed-up data
* carry on just as before

Any SNAFUs to watch out for?

Download the back-up before reinstalling the apps.
