So, just started to consider what various photographer friends and family call 'real photography'. Still at the trying to figure out if it's for me stage, so not really wanting to compare any particular models of camera (yet. ;))

Would like to learn more about the technical side of things before I get too attached to the notion; does anyone know of any good books on just learning how cameras work, what makes a good camera, that sort of thing, that they could recommend, please?

This probably sounds moronic: I'd have thought that was more about photography than the cameras themselves. Is it good for what I'm after (too)?

It has a bit of everything in it, however you asked ' what makes a good camera ' and part of my answer would be the person behind it, based on their own techinical ability. If you are just starting out, it is very important not concentrate on equipment alone.
As someone recently quoted on TP - “Amateurs talk about cameras, pros talk about lenses, masters talk about light.”::)
 
not sure of your level but i have just finished "Understanding Exposure" by Brian Peterson, and its helped alot!
 
I got a lot out of Scott Kelby's boxed set from amazon as it includes how to take this shot" features - set up, lighting and some settings too. Best 10 quid I've spent
 
I bought 'Digital Photography Masterclass' by Tom Ang which has proved useful and does contain a section regarding buying a DSLR and what to look for. I also intend to buy 'Understanding Exposure' as it has been recommended to me on many occasions.
