Depends on how they're setup.
If you have 2 seperate sites with the same content, then yes Google will see they're duplicated. However, if they're same url, i have no idea if Google would take that into consideration and not penalise you.
Its best to keep on the safe side though. Have the one domain name with the content on and 301 redirect the other sites at that main domain name. So the .com will go to the .co.uk, and the .co.uk will show up in the address bar.

New to this myself, but I have registered three domains (using subtle variations on the same name).
All three point to the same content which is stored on my mobileme account.
As it stands I have implemented all of my re-directions through my domain provider using 301 (permanent) re-directions (as oppose to 302 temporary re-directions).
In relation to Google I'd probably just register my main URL, as that's actually the one you want to drive your visitors to.

I'm another vote for 301 redirects. There is no need to register the other domains with Google - just the one you decide to use as the main one.
As to whether you should use .com or .co.uk, that depends on whether your content is oriented towards a UK audience or a UK place/whatever. If you really can't decide, then go with .com; people remember .com 'by default' and the search engines mostly treat it as neutral geographically.

Google allready knows this is an issue. This is why if you go to Google webmaster tools, you can choose to have a domain de-listed. If you remove one domain from the index, the other will get ranked and not be black-listed
There is one issue with this - the pages need to be temporarily a 404 ststus before google will remove the domain. Solotion - redirect (using DNS) the second domain into empty webspace while google delists the site
In google webmaster tools, go to the dashboard select the "URL Removals" then request the removal - google then put it on the list for removal
when the second domain is de-listed - repoint it at the first. Job done
