How do you sort your case

Trial and error really, put everything in without the dividers to get an idea and then build the dividers around that
 
To be fair i change mine around alot depending on what im doing, just keep changing it as you need to is probbably the best bet?
 
The question is, what are you using the bag for?

Carrying?
Or just storage?

My bag is primarily for transport, it's the Lowepro Primus. Admittedly it has limited storage as it is, as it's not designed for storage. But I don't put everything I have in it, even if I'm not going anywhere, as it'd be too damn heavy to take around when I do.

I only put in what I plan to use or will probably use, anything unlikely just goes on the shelf, so it's well ventilated and hit by sunlight (not directly) so that it keeps away the fungus.
