How to shoot star trails ?

As we have a few clear nights, can someone guide me how to shoot star trails please ? I know which direction to shoot but how do I set the focus as it's dark ?

I have a tripod and remote.

No worries. I had a go the other night but didn't follow the check check and check again advice. Left the lens zoomed at about 85mm so had gaps in the trails.

Oh well, lesson learned
