Imac/Apple Text Sizes

I have an iMac and as much as I love it, the text, especially in apps such as iMail etc seems very small. Is there a way of either magnifying the text or associating a different screen resolution to just one or two applications ?

I don't want to reduce the screen res overall as it's much better for working on images the way it is at the moment.

Just pressing Command/Apple and plus or minus works in safari and mail - not sure about others or setting a default size

You can change the sizes of fonts in the finder, or on the desktop by going to View -> Show View options, on the top menu bar as well. The larger your text size, the more spaced out the icons become too.
