How to stop the snow from turning grey if I manage to get out later on with me camera - over expose by 2/3-1 stop if I remember rightly, but whatabout white balance??

It could be more than that - possibly 1.5 stops if I remember correctly, especially in bright sunlight.

White balance? I know you get very blue shadows in snow. Why not shoot in RAW and correct later?

depends on where you are metering from . if its the snow open up at least two.

Normally I'd meter from the sky, but I'll bear that in mind.

You wont have a blue snow problem where it's lit by direct sunlight, it's when the snow is in shadow that you'll get a blue cast from the overhead blue sky. You could take a custom wb shot of the blue snow which would probably be best, but you can often correct it reasonably well in editing.
