I am about to buy a Kenko teleconvereter, I was wondering what the difference is between the 4-element and the 7-element version (apart from the three extra elements)?

Are you talking about the 2x tele converters?
Bit of googling shows that kenko makes two different 2x converters, the MC4 (4 elements) and the pro 300 (7 elements).
The pro 300 is more expensive and has better optics, so less quality will be lost.
2x TC's will always compromise optical quality a bit, but some lenses will handle them much better than others. I wouldn't be scrimping on a 2x converter, get the better one to avoid losing even more quality.
