Yes
Is there an easy way to identify what lenses are suitable for use with the likes of the Nikon D700, D3 etc. in order to make best use of the full frame sensor?

from d700 spec:

Compatible lenses: Type G or D AF NIKKOR; DX AF NIKKOR; AF NIKKOR other than type G or D*2; AI-P NIKKOR; non-CPU AI NIKKOR

it's an easy, sensible option to steer clear of DX though. i guess there will be issues with vignetting on the wider angle lenses, but other that that they are compatable.

Yes, one's that aren't labelled DX

Fine as far as Nikkors go but not a lot of use should the OP also use Sigma, Tamron and other 3rd party lenses.

The Sigma designation for lenses designed for APS-C sensors (so to be avoided for use on a full frame camera) is DC. DG lenses ARE suitable for FF DSLRs and 35mm.

Tamron use the designation DiII for their lenses to suit the smaller sensors. Di lenses are suitable for FF.

Tokina use Dx like Nikon.

Not sure about others such as Cosina, Vivitar etc.
