have a nikon d3100, and want to set manual exposure in live view, i have sussed out that i can set exposure before i go into live view, but that means if i move camera exposure wont be the same, also the meter shows on the photo taken so it can be set that way aswell, wondering if anyone knows if i can do it on live screen, thanks
 
i think you can press i button next to the shutter to bring up the normal information screen, including exposure meter.

no ideal, but you really should use the optical view finder :)
