Move less. It sounds simple, but the more you move the greater the risk they will go...if you're steady and you pre-focus on a particular flower or surface, you can usually grab something with a reasonable amount of time to spare.
Try in the morning before they have warmed up too much and try not to cast a shadow over them. You do get a few that are really skittish and no matter how hard you try you just won't catch them. Also some fly off at the pre-flash stage too. Just keep practising and you will succeed.
